    Ingredients

  • 200ml Olive Oil
  • 2 small head of Brocolli
  • 1 Avocado
  • 1/2 cup Toasted Pine Nuts
  • 2 cup Quinoa
  • 1/2 cup Grated Parmesan
  • 1/2 cup Slivered Almonds
  • 1 Lemon
  • 2 Garlic
  • 1 handful Basil leaves
  • Pinch of Salt

    How to make it

  1. 1. STEP

    Boil Quinoa in water at high heat with a ratio of 3 and 1/2 cup of water to 2 cup of Quinoa. Once it boils, turn the heat down to low and cook for 12 minutes.

    Boil some water in another saucepan, add Brocolli and blanch it for just 30 seconds so that it doesn't lose its color or nutrients. After 30 seconds, pour it straight into cold water to ensure that the flavor and color stays intact.

    Now, into a blender, add the toasted pine nuts, grated paramasen, basil and pieces of garlic. Squeeze the lemon juice into the blender. Add half of the our Brocolli that was blanched before into the blender. Also, add a couple of pinches of salt and a little bit of olive oil. Blend it into a nice consistency.

    Add Quinoa to a mixing bowl (without stirring). Add the mix from the blender into the mixing bowl with Quinoa and mix it gently.

    Chop Avocados into small cubes.

  6. 6. STEP

    Add the remaining brocolli, chopped avocados and slivered almonds and give it a good mix.

    Garnish it with some slivered almonds and basil leaves.
