Lemon Kale Avocado Salad

It's so easy to make with avocado, lemon, and pine nuts adding such a nice touch

    Ingredients

  • 2 cups of kale
  • 1 whole lemon
  • 1 tbsp Olive Oil/Avocado Oil
  • Pinch of Salt
  • 1 Cup of Pine Nuts
  • 1 Whole Avocado

    How to make it

  1. 1. STEP

    Take 2 cups of Kale. Only use the green leafy part pulled out from the stem and chopped into pieces. Add it into a mixing bowl.

  2. 2. STEP

    Cut your lemon and add the whole lemon juice into the mixing bowl over the Kale.

  3. 3. STEP

    Add 1 tbsp of olive oil into the mix (you can also use Avocado oil if you prefer). Also, add a pinch of salt.

  4. 4. STEP

    Massage it thoroughly so that the Kale to make it tender, nice, and easy to eat and set it aside.

  5. 5. STEP

    Put the pan over medium-high heat and toast the pine nuts by stirring super frequently so that they don't get burned. Stir them till they turn golden brown and move them to another bowl.

  6. 6. STEP

    Cut avocado into cubes and add them into the mixing bowl with Kale. Also, add the toasted pine nuts into the bowl.

  7. 7. STEP

    Using a spatula and mix the avocados until the Avocados is nice and coated.

  8. 8. STEP

    Garnish it with the remaining roasted pine nuts.
